A yummy dinner recipe that incorporates finely Chopped cashew nuts with beautifully tender chicken pieces to create a classy dinner for a date or just a family meal. This easy chicken recipe doesn’t take a lot of time and is absolutely crunchy and tasty!
1 x jar apricot preserves
1 x. Tspn curry powder
¼ x cup Dijon-style mustard
4 x chicken breasts
1 x cup Chopped cashews
- Preheat ovens to 375 degrees
- Mix the apricot preserves, mustard as well as curry powder in a large pan and heat over low heat, mixing regularly until preserves are completely melted and smooth.
- Throw in the cashews in a shallow bowl. Dip chicken pieces in the pan sauce, then roll in nuts to coat well and place in a lightly greased medium-sized baking dish.
- Bake at around 190 degrees C for around 30 minutes. Boil any remaining sauce and serve on the side with the baked chicken pieces.
