Ingredients

  • Vegetable oil
  • 5 cups shredded butternut
  • 2 Tablespoons minced fresh sage
  • 3/4 cup flour
  • 2 large eggs, lightly beaten
  • salt and pepper

Instructions

In a medium-sized mixing bowl, combine butternut squash, flour, eggs, minced sage, a pinch of salt, a pinch of pepper to the bowl

Line a plate with paper towels.

put vegetable oil in a pan and place it over medium-high heat.

Once the oil is hot, place 3-tablespoon scoops of the mixture into the pan around 2 inches apart and lightly

press down with the bottom of the spoon.

Cook the fritters for 2 to 3 minutes, then flip them over and cook the other side for around 2 minutes until golden brown and fully cooked.

Transfer the fritters to a plate and sprinkle them with salt.

Repeat the process with the remaining mixture.
