A Lovely sweet but savory salad that's really healthy but also quite filling.
Ingredients
- 1 Head Romaine lettuce roughly chopped
- 1.5 cups strawberries quartered
- 1/4 cups goat cheese
- 1/4 cups walnuts
- 1 pound grilled chicken
- 2 tbsp balsamic vinegar
- salt to taste
- For the grilled chicken:
- 3 tbsp fresh lemon juice
- 2 tbsp extravirgin olive oil
- 2 garlic cloves, minced
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- Cooking spray
Instructions
- For the grilled chicken:
- Prepare grill to medium-high heat.
- Combine the lemon juice, olive oil, garlic, and chicken in a large plastic zip-loc bag. Seal.
- Marinate in the fridge for 30 minutes, turning occasionally.
- Remove chicken from the bag.
- Sprinkle chicken with salt and pepper.
- Place chicken on grill rack coated with cooking spray.
- grill 6 minutes on each side or until done.
- For the salad:
- Chop the lettuce roughly, strawberries, and grilled chicken.
- Add all ingredients in a large bowl and mix thoroughly.
