Are you tired of waking up every morning to the same old breakfast? I know I was, it gets a bit boring over time, that’s when I went on a search to find something tasty and a bit more filling to sustain me during a busy day.

That’s when I came across granola, and I’ve had a granola bar from a store before but as a snack. I never thought I could have it as a breakfast meal. So it was time to make our own. After some initial experiments and trying other granola recipes online, I created my own granola recipe (scroll down to skip information on granola) or continue reading for more info. We also decided to add in tips when making granola,

Oats

You can’t have a granola recipe without oats. Oats are great, they give us the needed energy boost and are high in fiber. We find that whole grain oat is better to use as they retain their shape when baking.

Wheat germ

Wheat germ is where we get our protein from, as well as our fiber and healthy fats. They also a good source of vitamins and nutrients like potassium, magnesium, and Vitamin E.

Nuts or Seeds

We Added some silver almonds for that extra crunch in our granola. Almonds are great sources of vitamin E, fiber, protein, and healthy fats.  Alternatively, you can use pecan nuts, walnuts, peanuts, any type of nuts you prefer really.

Sweeteners

We added some apple juice, dried mixed fruits, and molasses to our granola. It’s natural sweeteners that are better than adding sugar. If you don’t want to use apple juice or the molasses you can always use some honey or maple syrup in the mix for added sweetness.

Spice

We love a little spice in our granola and went with some nutmeg, cinnamon, and a dash of vanilla extract for some added flavor.

Vegan Granola Recipe

Yield: 8 breakfast bowls
Prep Time: 12 minutes
Cook Time: 30 minutes
Additional Time: 5 minutes
Total Time: 47 minutes

The vegan granola recipe is perfect for any vegans looking to have a healthy, nutritious, and tasty meal every morning for breakfast!

Ingredients

  • cooking spray
  • 3 cups rolled oats
  • 2/3 cup wheat germ
  • 1/2 cup slivered almonds
  • 1 pinch ground nutmeg
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup apple juice
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 1 cup dried mixed fruit
  • 1 cup quartered dried apricots

Instructions

  1. Preheat oven to around 350 degrees F. 
  2. Prepare two trays and spray with cooking spray.
  3. In a large mixing bowl, combine the oats, wheat germ, almonds, cinnamon as well as nutmeg.  
  4. In a separate mixing bowl, mix apple juice, molasses as well as extract. Throw in all of the wet ingredients into the dry ingredients, stirring it into a thick paste. 
  5. Spread thick mixture onto the 2 baking sheets.
  6. Bake for 30 minutes in a heated oven, stirring mixture every 12 minutes, or until the granola has a golden brown color.  
  7. Let cool. 
  8. Stir in all the dried fruit.
  9. Serve and enjoy.
  10. Store in an airtight container
