We love a little spice in our granola and went with some nutmeg, cinnamon, and a dash of vanilla extract for some added flavor.

The vegan granola recipe is perfect for any vegans looking to have a healthy, nutritious, and tasty meal every morning for breakfast!
Ingredients
- cooking spray
- 3 cups rolled oats
- 2/3 cup wheat germ
- 1/2 cup slivered almonds
- 1 pinch ground nutmeg
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup apple juice
- 1/2 cup molasses
- 1 teaspoon vanilla extract
- 1 cup dried mixed fruit
- 1 cup quartered dried apricots
Instructions
- Preheat oven to around 350 degrees F.
- Prepare two trays and spray with cooking spray.
- In a large mixing bowl, combine the oats, wheat germ, almonds, cinnamon as well as nutmeg.
- In a separate mixing bowl, mix apple juice, molasses as well as extract. Throw in all of the wet ingredients into the dry ingredients, stirring it into a thick paste.
- Spread thick mixture onto the 2 baking sheets.
- Bake for 30 minutes in a heated oven, stirring mixture every 12 minutes, or until the granola has a golden brown color.
- Let cool.
